Asparagus


Asparagus is one of spring's stars, making its grand entrance in May. These green spears are low in calories but high in vitamins A, C, E, and K. They are also a great source of antioxidants. Whether you like them roasted, grilled, or steamed, asparagus offers a tender and slightly sweet flavor.

You can use nut oil to really enhance your dish, simply blanch the asparagus in boiling water before refreshing in ice cold water. Dry, then colour in a pan with a touch of nut oil before dressing in lemon juice & salt, delicious.


Strawberries


May is the month when strawberries are at their best. With vibrant colors and juicy sweetness, they are ideal for snacking or as the star of a dessert. Rich in antioxidants and vitamin C, strawberries are not only tasty but also beneficial for health.


Did you know, strawberries match perfectly with scallops. Contrast the sweetness with tangy balsamic, sharp lemon and aromatic herbs such as basil and you can create a surprisingly wonderful dish.

Add a mixture of raw and pickled radishes to your salads for texture sharpness. A simple pickling ratio of 1 part sugar, 1 part vinegar and 1 part water is always a good place to start, then you can add aromatics such s dried chillies, mustard seeds or cloves to suit your dish.


Cherries


While the cherry season usually peaks later in the summer, May heralds the early harvest of sour cherries. These tart gems are versatile, perfect for sweet and savory dishes alike.


Wild sour cherries can really transform a dish, such as with duck breads, or chocolate mousse, we even use them in our mince pies. Pair an amaretto biscuit crumb, vanilla gelato with a great quality sour cherries & syrup, such as Fabbri Amarena to send your taste buds to heaven.
